Observation: Dirty rags on countertops
Corrective Action: Ensure that rags are stored in sanitizer buckets filled with at 200ppm Quats or 100ppm bleach. The rags and solution should be changed regularly throughout the day so that the concentration of sanitizer does not drop below either 200ppm quats or 100ppm bleach.
113   Improper Sanitary Facilities
Observation: Cleaning is required behind and underneath equipment.
Corrective Action: Focus on the following areas: On top of and behind the dishwasher, the tap handles of the handsink, surface wiping the shelving adjacent to the handsink, underneath the greasetrap, the bar drink dispenser gun holder, and underneath the refrigeration equipment in the storage room.

Observation: Repairs are need to various surfaces.
Corrective Action: Refinish the walls in between the fry hood and the dishwasher, replace the uncleanable blocks underneath the greasetrap with a material that is waterproof and easily cleanable, repair the wall underneath the handsink so that it is smooth, non-porous and easily cleanable.

Observation: The warewashing table leaks water on the floor.
Corrective Action: Repair the warewashing table so that water does not drain on the floor.

Observation: No paper towel dispenser or soap dispenser for handsink.
Corrective Action: Provide soap and paper towel dispensers for the handsink.
116   Improper Construction / Maintenance of Establishment
Observation: Potatoes stacked up on the floor in the hall adjacent to washrooms.
Corrective Action: Store the potatoes in a secure location off of the floor away from the washrooms.

Comments:

Temperature logs are complete and up-to-date. All protective temperatures meet regulatory requirements at time of inspection. Kitchen flooring has recently been replaced. Fryers scheduled to be replaced with smaller units with wheels.
