Corrective Action: Anchovies must be kept refrigerated.

Corrective Action: Review proper cooling procedures (new signs posted at the time of inspection), temperature must be monitored throughout the process, use shallower pans.

Observation: Hot-held food in the burger station is not > 60 C (veggie burgers).
Corrective Action: Monitor the temperature; reheat to bring up to proper hot holding temperature.

Observation: Wiping clothes are not being stored in a sanitizing solution between uses.
Corrective Action: Clothes must be stored in 200 ppm Quat solution between uses; ensure that high hand contact surfaces (taps, cooler door handles) are cleaned regularly.

Observation: The floor in cooler #1 (Christine's) is cracking; there is a hole in the floor in the walk-in cooler downstairs - both of these areas cannot be adequately cleaned.
Corrective Action: Floors must be repaired.

Observation: Lid on the chest freezer in the burger station has exposed insulation.
Corrective Action: Carpet must be replaced with a proper flooring material.

Comments:

General cleanliness of the facility is satisfactory - ensure hard to reach areas such as under shelves are cleaned regularly (particularly in the warehouse area).
