Observation: The inside of the ice cream freezer was in need of cleaning.
Corrective Action: This should now and routinely be carried out.

Observation: Cleaning chemicals were being stored within the dry food store.
Corrective Action: Hazardous substances should be separated from food products during storage.

Observation: Food was being stored on the floor of the walk-in cooler.
Corrective Action: To prevent risk of cross contamination from floor to food contact surface, food should be stored off of the floor.

Observation: Open food was being stored in close proximity and directly above a garbage container.
Corrective Action: The garbage container or the food storage should now be moved.

Observation: Food was not being consistently day/date labeled.
Corrective Action: Food should be consistently day/date labeled for good stock control and food status awareness.
115   Inadequate Insect / Rodent Control
Observation: Both young and old cockroach activity is still apparent within the dry store, furnace and dishwashing areas. Diligent monitoring was not being carried out of all facility areas as directed when cockroach activity was first noted. Regular visits/treatment by a pest control company was being carried out.
Corrective Action: All areas of the facility including wall/floor junctions, behind and under work equipment, floor drainage grates and shelves must be kept clean. The floor drains should now be professionally flushed through to remove any build up of food debris within the system. Any holes or gaps or other sterile places where insects may harbour must be sealed or regularly disturbed/cleaned. Accurate daily monitoring of traps placed in various locations within the facility must continue and captured cockroach counts recorded. Pest control treatment must continue.

Observation: The door edge seals of the bar fridge were in disrepair.
Corrective Action: These should now be replaced.

Observation: The floor around the floor drain adjacent the steam kettles was in disrepair and difficult to clean effectively.
Corrective Action: This should now be repaired leaving a smooth, impermeable and cleanable surface.

Corrective Action: This should now be repaired/replaced.
