Observation: The empty "fish fridge" is not maintaining temperature below 4C, no thermometer in cooler.
Corrective Action: Ensure the coolers are capable of maintaining food < 4C prior to stocking in the evenings, thermometer must be present to allow easy monitoring by staff.
116   Improper Construction / Maintenance of Establishment
Observation: The floor under the cooking equipment has a large hole, area is very dirty.
Corrective Action: Floor must be repaired, cleaning is required.
