403 | Critical Cold potentially hazardous foods are stored/displayed at or below 4 degrees C (Sec 14(2)) Observation: The large line cooler cannot maintain proper temperatures. The cooler inserts are running too warm but are currently turned over rapidly. Corrective Action: The cooler must be repaired so that the line inserts can maintain 4 degrees celsius or below. The line cooler must be repaired/replaced. Until the cooler is repaired, the line inserts must be minimized and turned over every 2 hours. Any additional food must be stored in the walk-in cooler or in the adjacent line cooler. |
