110   Food Not Protected - General
Observation: Food was uncovered in dry storage and in walk in cooler. This may allow for contamination of food by chemical, physical or biological hazards.
Corrective Action: All food in storage is to be covered to adequately protect against any potential contamination from now on.

Comments:

Dishwasher is sanitizing properly, > 71 degrees Celsius. However, the operator has to manually fill the tank for the dishwasher, as a pump is broken. This can be done temporarily as the dishwasher is still sanitizing. The operator has a technician coming in to service the dishwasher and a follow up will be done to ensure this problem is fixed so mechanical dishwashing can be done easily.

Temperature logs are well maintained and up to date.
Food contact surface sanitizer is bleach.
General cleanliness and sanitation of the facility is satisfactory.
All protective temperatures meet health requirements.
