Observation: The cieling tiles in the kitchen are dirty, particularly above the vent hood.
Corrective Action: Clean the cieling tiles.

Observation: The lights in the kitchen are not protected from shattering by covers or plastic sleeves.
Corrective Action: Provide protective covers or sleeves for the lights.
402  Critical Food is protected from contamination (Sec 12(b))
Observation: Cooked and seasoned potatoes were observed stored at room temperature in the disconnected hot hold unit on the premises. This has been observed on multiple occasions. Holding this food at room temperature for multiple hours in this manner will eventually cause food borne illness.
Corrective Action: Food placed in the cooler at time of inspection. Do not store potatoes at room temperature in this equipment. The potatoes should be put in the walk-in cooler after immediately after cooking as it has been demonstrated that staff do not put the potatoes in the cooler once service begins. Consider providing a rollling rack to transport this food once it has cooked.
503  Critical Equipment/utensils/food contact surfaces are in good working order (Sec 16(b))
Observation: The dishwasher sanitizer line had been mixed up with the dishwasher detergent line so that the dishes were not washed properly.
Corrective Action: Corrected at time of inspection. Ensure that the dishwasher chemical lines and levels are checked at the beginning of each day by running the prime switches to see that the chemicals come out of the right tubes into the dishwasher.
503  Critical Equipment/utensils/food contact surfaces are in good working order (Sec 16(b))
Observation: The glasswasher sanitizer line was not working properly at time of inspection.
Corrective Action: Repair asap. In the interim, use the dishwasher to wash the glasses or alternatively provide a sanitizing dip for all of the glasses run through the glasswasher.
508   Adequate equipment/facilities available for sanitary maintenance (Sec 17(3))
Observation: The kitchen hand sink paper towel dispenser is broken.
Corrective Action: Fix the paper towel dispenser.

Comments:

All protective temperatures meet regulatory requirements at time of inspection. Temperature logs are complete and up to date. Re-inspection for all items to be conducted on August 29th at 10:00am
