A summary of the violations found during the inspection are listed below.

Observation: Line Cooler (Christine's) is not maintaining temperature < 4C, food temperatures were satisfactory as the products were recently taken from the walk-in.
Corrective Action: Continue to monitor cooler temperatures and service/repair cooler as required; products are only placed in the cooler during service period; at the time of inspection, products were placed on ice in the cooler to help maintain proper temperature.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: There was no measurable amount of sanitizer in the glasswasher (Christine's bar) - corrected at the time of inspection.
Corrective Action: Monitor the use of iodine in the glasswasher; test concentration using test strips.
110   Food Not Protected - General
Observation: Small buckets of product (stock) is being stored on the floor in Christine's walk-in freezer.
Corrective Action: All products must be stored off of the floor.

Observation: Ice machine downstairs has a build-up of dirt inside.
Corrective Action: Ice machine must be cleaned.
116   Improper Construction / Maintenance of Establishment
Observation: Poor lighting in the produce cooler. Floor in Christine's cooler (upstairs) has cracks in the surface and can no longer be adequately cleaned. There is carpet in the food service line in the Whistler Kids area.
Corrective Action: Additional lighting should be provided. Repair flooring in cooler. Carpet must be replaced with an appropriate flooring material.


Additional areas discussed at the time of inspection:
1. With the exception noted above; all refrigeration temperatures are satisfactory. Ensure that products stored on ice are surrounded by the ice and in stainless inserts to help maintain proper temperatures.
2. Hot holding temperatures are satisfactory.
3. Rinse temperature of the dishwasher is good (75C at the plate). When washing large trays, do so one at a time to ensure both sides of the tray are cleaned and to prevent dirty wash water from sitting on the tray.

* All critical violations noted on the previous reports (Dec 10 & Dec 21/07) have been addressed.
