Observation: All potentially hazardous foods are not stored under refrigeration (4ºC / 40ºF or less ). Raw eggs (1 tray less 4 eggs) at ~17C.
Corrective Action: Raw eggs (1 tray less 4 eggs) discarded at time of inspection. Store all potentially hazardous foods <4C - under refrigeration or on ice.
108  Critical Repeat Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: 2.Wiping cloths are not clean, not restricted in use, and not stored in approved sanitizing solution at front service area and at pizza prep table.
Corrective Action: 2.Sanitizing solution (QAC 200 ppm) with wiping cloths must be kept in a separate container, monitored with test strips and changed every 2 hours. Prepared for front service area and pizza prep table at time of inspection.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: 1.Sanitizing rinse for dishwashing not at proper concentration for adequate time (Iodine 12.5ppm) at glasswasher in bar/lounge/coffee front service area .
Corrective Action: 1.i.Discontinue use of glasswasher immediately. ii.Have glasswasher repaired immediately. iii.Confirm when repairs to glasswasher completed.

Observation: Outstanding from Inspections 01/02/2005; 08/02/2005; 01/04/2005 - area above sink in dishwashing area has not yet been repaired... tiles are cracked and loose; seal at sink/wall join is dirty and no longer sealed.
Corrective Action: Order issued under Section 63 of Health Act -1.replace loose/cracked tiles above sink in dishwashing area. 2.remove caulking at sink/wall join, thoroughly clean at sink/wall join, and re-seal at sink/wall join. 3.complete all repairs to area above sink in dishwashing area on or before January 31, 2006.

Observation: 2.Sanitation logs are not being maintained.
Corrective Action: 3.Sanitation logs must be maintained (esp. for dishwashers!).

Observation: 2.Floors in dry goods storage showing unclean surfaces - build-up of dirt under shelves.
Corrective Action: 2.Thoroughly clean floors in dry goods storage. Install casters on shelving so that it can easily be removed for ease of cleaning.

121  Critical Inadequate food safety training - staff
Observation: Few of employees presently on staff have completed the required food handler training program.
Corrective Action: The operator must ensure that in their absence at least one employee on duty has a FoodSafe Certificate, as per Section 10(2) of the Food Premises Regulation.The fine for failing to have adequately trained employees is $230.00.
122  Critical Repeat Inadequate Food Safety Plan
Observation: A Food Safety Plan is required under Section 23 of the Food Premises Regulation. The fine for failing to have written food handling procedures is $230.00. Corrections/ revisions and cooling procedures remain outstanding form 01/04/2005.
Corrective Action: The corrections / revisions and cooling procedures in Food Safety Plan must be submitted immediately!

-all freezers <-18C=good! **Walk-in freezer requires some organizing!

-all hot holding >60C=good!
-all handbasins have liquid soap and paper towels=good! **see #113.above**
-ice scoop stored separately from ice in front service area and at ice machine = good!
