Observation: Thermometers were not provided in each refrigerator, temperatures were noted at above +4C and fridge door edge seals were in disrepair on the pizza line fridge and on the three drawer fridge.
Corrective Action: Thermometers should be provided in each fridge and temperatures monitored daily and recorded in line with good HACCP practices. Temperatures should be maintained at +4C or colder. Door edge seals should now be replaced where damaged.
