Observation: The dry storage area is cluttered. Several boxes of napkins and cardboard products are stored on the floor.
Corrective Action: Re-organize the dry storage area so all items are stored at least 6 inches off the floor on the shelves provided. This will facilitate easier cleaning of floors and monitoring for potential pest activity.
402   Food is protected from contamination (Sec 12(b))
Observation: Some bags of food were stored on top of unpackaged foods in the freezer drawers next to the oven. The exterior of commercially packaged food bags may be dirty and may contaminate open foods.
Corrective Action: Discontinue storing bags of food on other unpackaged food.
505   Food premises maintained in a sanitary condition (Sec 17(1))
Observation: An accumulation of food debris and filth was noted in some areas of the kitchen. Specifically: around the grease trap access, inside coolers (especially behind cooler drawers), metal shelves in the walk-in cooler and hard-to-reach corners like under the bar.
Corrective Action: Conduct a thorough cleaning of these areas. Follow-up inspection scheduled for first week of October.
514   Single use containers are discarded after use (Sec 20)
Observation: Plastic sour cream containers are being re-used for food storage. These are not suitable for this purpose as they cannot be properly sanitized.
Corrective Action: Discard all "re-purposed" sour cream containers and replace with proper food storage containers that can be washed and sanitized.
604   Adequate handwashing stations at convenient locations are available for employees (Sec 21 (4))
Observation: There was no paper towel at the hand sinks at time of inspection.
Corrective Action: Restock the paper towel dispensers.

Comments:

Routine inspection conducted - the following items were in compliance:
-All protective temperatures met regulatory requirements.
-Generally no concerns noted with food storage - all items covered and dated.
-Dishwasher sanitizer concentration measured 50ppm chlorine during final rinse cycle.
-Quat sanitizer for food contact surfaces measured 200ppm.
-No signs of pests were noted during inspection.
-Ventilation system servicing is up-to-date, next service due January 2014.
-All foods originate from approved sources.
-Foodsafe Certified staff were on site at time of inspection.
-Temperature logs are maintained on a daily basis.
-Food contact surfaces are in generally good condition. The cutting board under the garlic butter warmer needs to be replaced.

During today's visit, it was noted that the grout between the kitchen tiles has deteriorated significantly, especially around the dishwasher. Over time, deterioration or complete decay of grout will result in food accumulation, odor, pest attraction and possibly damage to floor tiles from moisture penetration. Replacement of grout must be made a priority during the next fiscal year.
