A summary of the violations found during the inspection are listed below.

402   Food is protected from contamination (Sec 12(b))
Observation: Vacuum-packaged salmon was found thawing in the walk-in cooler; packages were still sealed.
Corrective Action: In accordance with the approved food safety plan for this premises, packages of salmon must be opened prior to thawing to preclude potential growth and toxin formation by Clostridium Botulinum bacteria (type E).
402   Food is protected from contamination (Sec 12(b))
Observation: Produce in the top drawers of the refrigeration units (front service line) is exposed to unclean surfaces.
Corrective Action: Pull out the top drawers and clean the underside of the stainless panels inside.
604   Adequate handwashing stations at convenient locations are available for employees (Sec 21 (4))
Observation: The lever that activates the hand sink beside the service line is wrapped with a dirty cloth.
Corrective Action: Remove the cloth and repair or replace the lever; all surfaces must be in good repair and be washable.

Comments:

A routine inspection was conducted, the following observations were made:
- All refrigeration temperatures met regulatory requirements.
- Coolers are equipped with thermometers.
- Adequate chlorine concentration was detected in the dishwasher's final rinse water.
- Quat sanitizing solution is available for food contact surfaces (ensure all spray bottles are appropriately labeled).
- Bar glass washer measured 12.5ppm iodine in rinse water.
- Foodsafe trained staff were on site at time of inspection.
- Ventilation system professional cleaning is up to date.
- In general, all foods are stored in a sanitary manner and are protected from contamination.
- No signs of pest activity were noted within premises.
- Hand washing stations are equipped with liquid soap and paper towel. *Do not store clean dishes under the paper towel dispenser.*
- All equipment appeared to be in good working order.
