Violations:
A summary of the violations found during the inspection are listed below.

Observation: The inside of the ice machine was stained and had calcified deposits.
Corrective Action: Unit should be emptied and thoroughly cleaned/sanitized in accordance with manufacturers directions.
116   Improper Construction / Maintenance of Establishment
Observation: There is a missing ceiling tile in the dry storage room.
Corrective Action: Replace the missing tile.

Observation: The server station upstairs had a missing panel on the bottom counter and was generally in disrepair. The overall sanitation of this area was not acceptable - food debris should be removed from the floors and counters after each service.
Corrective Action: Repair any broken cupboards/doors etc. Some work in this area may be required to make cleaning easier for staff as well as more diligence on part of the staff working this station.

Comments:

Items corrected from January 25, 2011 inspection report:

1. The cooler next to the deep fryer has been replaced - new cooler measured a temperature of 4C.
2. Fruit fly problem behind the bar has improved - new stainless steel plating has been installed behind the glass washer. Some joints where stainless was installed need to be sealed with caulking to prevent water penetration.
3. A soap and paper towel dispenser has been provided at the upstairs server station.

General Observations:
1. All hand washing stations were equipped with liquid soap and paper towel.
2. All refrigeration temperatures met regulatory requirements.
3. All hot holding temperatures met regulatory requirements.
4. Thermometers were noted in all coolers.
5. Temperature logs are maintained.
6. Dishwasher achieving >71C measured at the plate during final rinse.
7. Quat sanitizing solution available and measured 200ppm.
8. General sanitation was acceptable.
9. Ventilation system will be due for cleaning on April 4, 2012.
10. Staff have Foodsafe Level 1 training.
11. Facility has a pest control program in place - no signs of pest problems noted during inspection.
12. No issues noted with food storage - all foods covered and dated.
13. Bar glasswasher tested adequate concentration of sanitizing solution.

Note: Backflow preventers for the facility indicate last testing was done on December 20. 2009. These should be tested at least once per year. Ensure this is done before the next inspection.

The following procedures and behaviors were observed during this inspection - no concerns noted:
1. Temperature checks were underway - observed staff member sanitizing the probe thermometer between food checks.
2. Proper hand washing procedure observed.
3. Cooling and thawing of potentially hazardous foods was underway. When questioned, staff appeared to have good knowledge and understanding of proper cooling procedures for potentially hazardous foods.

Future Upgrades:
1. Painting of the walk-in cooler floor is scheduled for later this year.
