A summary of the violations found during the inspection are listed below.

102  Critical Food Not Protected From Contamination - Micro
Observation: 1. Chicken being stored/thawed on the shelves directly above the raw vegetables in the walk in cooler. 2. The ice cubes from the ice machine are being packed to sell in the beer and wine store. The ice is packed manually. The area around the ice machine is not being kept clean. The ice scoop is being stored on the top of the machine and there is stading water from a water main leak around the machine. Empty bottles are being stored near the ice machine in the ice packaging area increasing the possiblity of contamination of ice at the time of packing.
Corrective Action: 1. All the raw meats must stored on the lowermost shelf and a separate space must be designated for the raw foods. This violation was corrected at the time of this inspection. 2. The area around the ice machine must be kept clean. Empty returned bottles must not be stored in this area. The ice scoop must be stored in a clean container and both the container and the scoop must be sanitized or run through the dishwasher before carrying out the manual ice packing. The ice packers must wash there hands before handling the ice. Please be advised that the failure to observe above suggested practice in any future inspections may result in an enforcement action that may include the prohibition on ice packing and selling.
105  Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: Blenched potato fries are being kept at the room temperature. According to the operator these fries has been out for slightly more than 2 hrs. Garlic in butter being kept out of fridge for extended periods.
Corrective Action: All potentially hazardous foods must be kept below 4 degree Celsius. The violation corrected at the time of this inspection. Garlic in butter is a potentially hazardous food and must be kept below 4 degree Celsius all the times.
110   Food Not Protected - General
Observation: Temperature logs are not being maintained. Chlorine test strips to measure sanitizer concentration in the spray bottles and the dishwasher are not available.
Corrective Action: Please start maintaining temperature logs for all equipment temperatures. The Chlorine test strips must be provided and the daily dishwasher sanitizer logs maintained. A log for the glasswasher and the spray bottles in the bar area is currently being maintained.
116   Improper Construction / Maintenance of Establishment
Observation: 1.There is no lighting in the dry storage area. 2. Area behind the ice machine is in need of cleaning.
Corrective Action: 1.The dry storage area must be provide with the adequate lighting to facilitate cleaning and operation. The light source must have a shatter proof cover on it. 2. Area around the ice machine must be kept clean.

Comments:

Other items observed/ discussed at the time of this inspecion
1.The dishwasher and the glass washer are sanitizing at > 50 ppm chlorine and > 12.5 ppm iodine.
2. Daily logs are being maintained for the glass washer and the spray bottles in the front bar area. Please start maintaining these logs for the kitchen dishwasher and the spray bottles.
3. All equipment temperatures are satisfactory.
4. The ceiling above the dishwashing area has been repaired.
