Observation: Tray of food stored on the floor under the cook line overnight.
Corrective Action: All potentially hazardous food must be stored under temperature control; do not store food on the floor, this practice may lead to contamination of the food.

Additional items noted at the time of inspection:
Light bulbs have been replaced in the walk-in freezer and in the hall by the walk-in cooler; lighting is now adequate in these areas.
The walk-in freezer has been reorganized; all food is now stored off of the floor.
The back storage area has been thoroughly cleaned and reorganized.
Ensure that lids are placed on all potentially hazardous foods on the prep line to help maintained the food temperature below 4 degrees Celsius.
