Comments:

Items Corrected from Previous Report:
1. Temperature of stand-up cooler next to oven met regulatory requirements.
2. Glass washer sanitizing solution is being monitored by staff.
3. Upper bar cooler is still leaking but cleaning and sanitizing of these units has improved and is being done more frequently. Staff should clean this unit as frequently as required to prevent pooling of water from condenser.
4. The chemical station is now set up to dispense quatz sanitizing solution and spray bottles are located throughout the kitchen which tested concentrations of 200ppm - good.
5. The ice machine has been cleaned and sanitized and an access panel has been fitted so the reservoir is no longer exposed.
6. A magnetic strip has been installed in the prep area for cutting knife storage.
7. Burnt out lights have been replaced.
8. All missing ceiling tiles have been replaced and all tiles are now light colored.
9. The caulking behind the prep counter by the dishwasher has been replaced.
10. All refrigerators have thermometers.
11. All foods are now stored off the floor.
12. Storage for the ice scoop has improved.

Outstanding Items from Previous Report:
1. The metal shelves used to store plates should be removed at the end of each shift and run through the dishwasher as they are difficult to clean in place.
2. Some lights within the kitchen area still require shatter-proof protective covers.

Future Upgrades Discussed:
1. The ceiling tiles that are currently in place are not water-proof and will eventually need to be replaced with a type that is smooth, non-porous and can be easily cleaned.
2. The grout on the floor will need to be cleaned and the floor re-sealed.
3. The design of the back area where the glass washer is stored is not suitable for the production and accumulation of moisture. Re-modelling this area was discussed with the operator and should commence during the next shoulder season. Upgrades must include re-surfacing the floor, installing a drop-ceiling, removing shelves to accommodate the glass washer and installing a blacksplash for the glass washer.
