Observation: Bar dispenser gun holder is dirty.
Corrective Action: Bocca and Amsterdam cafe should include this on a daily cleaning program.
503   Equipment/utensils/food contact surfaces are in good working order (Sec 16(b))
Observation: The under grill cooler doors did not close properly at time of inspection.
Corrective Action: Corrected at time of inspection. Monitor the temperature of this cooler regularly to ensure that it maintains 4C or below.
505   Food premises maintained in a sanitary condition (Sec 17(1))
Observation: Tiles in the kitchen area should be thoroughly cleaned as there is a buildup of material in the grout lines.
Corrective Action: The biannual deep cleaing of the tiles should be conducted during the shoulder season.

Comments:

Premises is clean and well maintained. All protective temperatures meet regulatory requirements at time of inspection. Dishwasher reaches required sanitizing temperature. Glasswashers reach required sanitizing concentration for chlorine. For gelato service in the summer, ensure that there is no chance for a cross connection to occur with the gelato scoop wash basin - through either an air gap or the installation of a check valve.
