Comments:
Follow-up inspection conducted to review refrigeration and rotation procedures for take-out sushi rolls. It appears that temperatures of the rolls do fall to acceptable limits in the display case; however a monitoring system is still required in order to verify that temperatures fall to acceptable limits within 2 hours. Discussed implementing a colored sticker system with operator to assist in monitoring temperatures.
