Unless repaired to maintain 4 degree Celsius or below temperature, the cooler must not be used to store any potentially hazardous items for more than 2 hours. |
Comments:
Follow up inspection. Discussed the results of this inspection with the restaurant manager.
The following items from the previous inspection has now been corrected:
- Maximum two hour time tracking system for the prepared sushi rolls is being followed.
- Hot holding temperatures are above 60 degree Celsius. Do not use double inserts on the hot holding unit.
The following items still needs to be addressed:
- The upright cooler is still running warm. The coldest temperature recorded inside this cooler is 7 degree Celsius. The operator advises that the turning down the thermostat on this cooler results in excessive freezing. The cooler requires servicing/repair. Unless repaired to maintain 4 degree Celsius or below temperature, the cooler must not be used to store any potentially hazardous items for more than 2 hours.
