Observation: The following maintenance related items from the previous inspection are still outstanding: - A waterproof finish has not been provided behind the mop sink. - The wooden blocks underneath the undercounter freezer in the front sushi service area has not been re finished. - The old door screen has not been removed from the establishment.
Corrective Action: -Waterproof refinish is highly recommended behind the mop sink. -The wooden blocks underneath the freezer must be refinished with a water proof paint or equivalent to make them easily cleanable. -Please remove any unnecessary items from the establishment.

Observation: The handle of the upright cooler in the kitchen has been covered with a material that is not easily cleanable.
Corrective Action: Remove the cover from the cooler handle to make the handle easily cleanable.

Observation: Food containers being stored on the walk in cooler floor.
Corrective Action: Provide additional shelf space in the walk in cooler. No food containers should be stored on the floor.

Observation: Open flour bags being stored in plastic crates at the ground level.
Corrective Action: Always store open flour bags in a pest proof container minimum 6 inches above the floor.
604   Adequate handwashing stations at convenient locations are available for employees (Sec 21 (4))
Observation: The hand washing station in the kitchen is blocked and the sink is being used to store various items. No paper towel provided in the kitchen. In the washroom, no paper towel has been provided in the dispensers.
Corrective Action: All the items blocking access to the hand washing station in the kitchen must be removed. Paper towel must be provided in the dispenser. Provide paper towel in the paper towel dispenser in the public washrooms.
701   Operator has written food handling procedures in place to prevent health hazards (Sec 23 (2))
Observation: A written food safety plan has not been developed. The previously agreed upon target completion date to correct this violation has already passed.
Corrective Action: The operator must provide a written food safety plan before 30th April, 2013. The failure to provide an acceptable plan may result in a violation ticket.

Observation: Written sanitation plan has not been developed. The previously agreed on target completion date to correct this violation has already passed
Corrective Action: Provide a written sanitation plan before 30th April, 2013. Failure to provide written procedures before the target completion date may result in an enforcement action from this office.

Comments:

First routine inspection of this establishment with Senior EHO Cindy Watson.
In compliance items:
- All refrigerators are running below 4 degree Celsius.
- Freezer running below -18 degree Celsius.
- Thermometers provided in all the cooling units.
- The mechanical dishwasher sanitizing at >50 ppm chlorine in the rinse cycle.
- Foodsafe certified food handlers available.
- General cleanliness in the kitchen and washrooms is satisfactory.

Note: The operator is highly recommended to provide an easily cleanable waterproof finish underneath the front sushi service counter. A washable baseboard or equivalent is also highly recommended to cover the metallic wire conduit running at the floor-counter interface.
