Observation: Raw meat is being thawed at room temperature.
Corrective Action: Thaw meat in the cooler or under cold running water.

Observation: There is a hole in the wall as well as damaged particle board next to the ice machine along the floor-wall joint
Corrective Action: Repair the hole in the floor-wall joint next to the ice machine.

Comments:

Premises generally clean and well maintained. Ensure that proper cooling procedures are followed for the soups and sauces (60 degrees celsius to 4 degrees in 6 hours). Probe thermometer provided to operator at time of inspection.
