Observation: 1. Thermometers are not available in the front sandwich cooler and the cheese cooler. The digital thermometer on one of the front display coolers is not operational. 2. The wiping clothes are not being stored in the sanitizer solution.
Corrective Action: 1.Thermometers must be provided in all refrigeration, freezing and hot holding equipment. 2. The wiping clothes should be stored in an approved sanitizer solution (200 ppm quat or 100 ppm bleach). Sanitizing the food contact surfaces using sanitizer spray bottle and replacing the wiping clothes within 2hrs is also an acceptable method. Please ensure that all the sanitizer spray bottles are labelled clearly and correctly.

Observation: The temperature records are not being maintained regularly. No temperature records available for the hot chicken tray. No monitoring is being done for the sanitizer concentrations/levels in the sanitizer dispenser at the three compartment sink.
Corrective Action: The temperature logs must be maintained regularly. The chicken hot tray temperature and the sanitizer concentration must be included in the daily monitoring.

Comments:

General observations:
1. All temperatures are meeting health requirements.
2. The sanitizer dispenser on the three compartment sink is dispensing >200 ppm quat solution.
3. The dishwasher in the deli area is not in use and was not tested as part of this inspection.
4. According to the information provided by the store manager, the supervisor of the deli section has Food Safe Level 1 training. Please ensure that there is at least one food safe certified person working in the deli area.
