Comments:

Permission to operate is granted today - November 19th, 2009.

The following items must be completed prior to opening day:
1. All construction equipment must be removed and all surfaces cleaned and sanitized.
2. All coolers on the main line must maintain a temperature of 4C or less.
3. All coolers must have thermometers.
4. All digital thermometers on cooler exteriors must be functional.
5. A self-closer must be installed on the door leading to the staff washroom (in the dry storage area).
6. All foods must be stored 6 inches off the floor.
7. The sandwich station cooler lid must be repaired.
8. The source of pooling water in the sandwich cooler must be investigated and repaired.
9. All hot holding equipment must keep foods at 60C or hotter.

A follow-up inspection is scheduled for Thursday, November 26th to address these outstanding items.
