403 | Critical Cold potentially hazardous foods are stored/displayed at or below 4 degrees C (Sec 14(2)) Observation: The line cooler has yet not been repaired and is running at more than 4 degree Celsius. As per information provided by the operator this cooler is not being used to store any potentially hazardous foods. At the time of this inspection however, cheese slices were observed being stored in this cooler. Corrective Action: Do not use this cooler until it is repaired to maintain 4 degree Celsius or less temperature. Cheese slices removed from this cooler at the EHO's request. The operator is again reminded that storing potentially hazardous foods under unsafe temperatures is a critical violation and may result in $345 violation ticket. |
