Comments:
Food handling observed during time of inspection - no concerns at this time.
All refrigeration units met regulatory requirements at time of inspection.
Daily monitoring and logging occurs for temperatures as well as for cooling processes - good.
Proper cooling procedures are being adhered to - good. A more efficient means of rapid cooling than the water bath could be an asset to a facility of this size and capacity - especially when dealing with banquet-sized batches of sauces, stews and soups.
All the hand wash stations were equipped with liquid soap and paper towel.
Seafood tags are kept on site - good.
Food storage in general is excellent - all foods are stored off the floor, dated and covered.
The butcher area is clean and well-organized.
The pastry kitchen is also clean and well-organized.
There were no signs of pests at time of inspection.
There were no other concerns noted during the inspection.
