402  Critical Food is protected from contamination (Sec 12(b))
Observation: A tray of raw meat is stored on a box of vegetables in the walk in cooler.
Corrective Action: Please ensure that raw meat is stored in its designated space and never above ready to eat foods.
507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: No detectable sanitizer in the dishwasher rinse cycle. Further investigation reveals that the sanitizer suction line has been connected to a bucket of detergent instead of a sanitizer.
Corrective Action: Repair/service the dishwasher. It must provide >50 ppm chlorine in the final rinse cycle. In the mean time all the dishes must be manually sanitized in 100 ppm bleach solution. Also provide chlorine testing strips to test for sanitizer levels. Test and record sanitizer levels daily.
511  Critical Cold holding equipment is able to maintain a temperature of 4 degrees C. or lower (Sec 19(1)(b))
Observation: One of the line cooler in the front is measuring 7 degree Celsius temperature in the lower portion. The temperature of food in the inserts on the upper portion of the cooler is 5 degree Celsius. As per temperature log, this cooler is running consistently above 4 degree Celsius.
Corrective Action: Monitor temperature of this cooler more frequently. If the temperature doesn't improve in next few hours, the cooler must be repaired. Please insure that the person monitoring cooler temperatures is aware of the corrective action to be taken when a cooler fails to run at 4 degree Celsius or below.
