Observation: The dry wall in the dishwasher room near the door is broken.
Corrective Action: Repair the broken dry wall. The wall-floor interface must be coved with washable material.
507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: The high temperature dishwasher is not reaching 71 degree Celsius on the dishes.
Corrective Action: The high temperature dishwasher must reach 71 degree Celsius on the dishes ( 82 degree Celsius on the rinse temperature gauge).
507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: The sanitizer spray bottles does not have any detectable sanitizer in them. The bottles are mislabelled.
Corrective Action: 200 ppm quat sanitizer must be used to sanitize the food contact surface. Calibrate the quat sanitizer dispenser and provide quat test strips to monitor the sanitizer concentrations. Until sanitizer dispenser is calibrated, 100 ppm bleach or 200 ppm quat solution should be made manually and provided in the spray bottles.The spray bottles must be correctly labelled with the name and concentration of the chemical.
