Observation: Pesto sauce is stored at room temperature for extended periods of time.
Corrective Action: Ensure that pesto sauce is kept at 4 degrees or below, or if this cannot be maintained, the sauce is portioned into single servings, or portioned into the dispenser in volumes that can be turned over within 2 hours.
110   Food Not Protected - General
Observation: The filter for the ice machine is due for replacement.
Corrective Action: Replace the filter for the ice machine.
115   Inadequate Insect / Rodent Control
Observation: There is a hole in the wall next to the ice machine upstairs.
Corrective Action: Seal the hole in the wall, this may include providing an access panel if needed.

Observation: The maintanence room downstairs is disorganised, is not adequately sealed and there is evidence of pest activity.
Corrective Action: Clean and seal this area so that it is pest proof. Organise the materials in this area, provide shelves for can of paint and other materials or alternatively remove the materials completely.

Observation: A splash guard is required next to the handwash sink in the pizza station to prevent splashing on to food and food contact surfaces.
Corrective Action: Ensure that a splash guard is installed.

Observation: The wood shelving in the wine storage area requires refinishing.
Corrective Action: Refinish this area. It is acceptable to conduct this refinishing in a staged approach.

Observation: The area above the compressors in the walk in coolers next to the pop syrup storage area downstairs is open, collects materials, and could lead to pest harbourage.
Corrective Action: Provide a barrier above the coolers, such as the mesh that is installed above the main walk-in cooler in the downstairs area.

Comments:

Premises is generally clean and well maintained. All protective temperatures of coolers and hot holding unit meet regulatory requirements at time of inspection.

Maintenance items from previous report that have been addressed are as follows:

New door sweeps have been provided for all loading doors and are functioning correctly.
The laundry room area ceiling has been sealed as requested.
Cleanable tiles have been provided in the downstairs servery area.
Cleanable tiles have been provided in the cappuccino bar next to the stand up cooler so that a smooth cleanable surface is provided that does not lead to ponding water.
