511   Cold holding equipment is able to maintain a temperature of 4 degrees C. or lower (Sec 19(1)(b))
Observation: The line inserts are not able to maintain 4C during busy periods.
Corrective Action: Operator must submit a written plan that details how food in the inserts will be turned over every 2 hours to ensure that no temperature abuse of food occurs. The time control plan must include a sign off sheet where staff confirm that the food has been turned over and the time at which it occurred.

Comments:

The line cooler has been repaired so that the inside of the cooler reaches 4C as required.
