Observation: There were signs of pest activity noted in the storage room at the end of the corridor (bar side of restaurant).
Corrective Action: Currently this area is only used to store extra dishware and other items not required on a daily basis. All dishware and glassware should be sealed in pest proof containers with tight-fitting lids. Area should also be better organized - shelving may be helpful. While there were no signs of pest activity noted in the grilling garage, a number of potential entrance points were identified during the inspection. This area must be thoroughly inspected and any potential entrance points sealed.
116   Improper Construction / Maintenance of Establishment
Observation: The wood shelf used to store inserts next to the hand sink does not appear to be used regularly. Edging is bare wood and cannot be easily cleaned.
Corrective Action: Remove this shelf or repaint areas where bare wood is exposed.

Comments:

Items corrected from previous report (December 23, 2009):
1. All temperatures of blanched vegetables met regulatory requirements. Inserts are still currently stored in an ice bath, temperatures are strictly monitored by staff by keeping a probe thermometer inside the inserts at all times. Additional mechanical refrigeration should be installed to eliminate ice baths as they are not a reliable means of storing potentially hazardous foods.

General Observations:
1. Hand washing stations equipped with liquid soap/paper towel.
2. All temperatures met regulatory requirements.
3. Thermometers present in all coolers.
4. Quat sanitizer tested 200ppm, spray bottles noted at all stations.
5. Dishwasher tested >71C at the plate during final rinse.
