Observation: Potentially high risk food on self service display noted at +18C. Radiated heat noted from spot lighting above and from nearby griddle.
Corrective Action: This type of food should not stay at elevated temperatures above +4C for more than two hours I recommend that the griddle equipment be moved to an alternative location and covers placed over foods during quiet times.
106  Critical Inadequate Hot Holding Temperature of Potentially Hazardous Food(s)
Observation: Salad station fridge noted at +6C
Corrective Action: This should now be repaired/adjusted.
110   Food Not Protected - General
Observation: Cleaning beneath stove was poor.
Corrective Action: Cleaning should now and routinely be carried out beneath work equipment.
