102  Critical Repeat Food Not Protected From Contamination - Micro
Observation: The raw meat/sea food storage practices in the walk in cooler has not yet been corrected. Raw meats are still being stored above the other ready to eat foods.
Corrective Action: A designated storage space must be created for the raw foods. This space to store the raw foods must not be above any other food that could be potentially contaminated. Provide appropriate signage on the shelves to ensure that all the employees are aware of the correct location to store different types of foods. Please be advised that the failure to correct this violation may result in a $345 violation ticket.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: The detergent and the sanitizer containers for the front bar glass washer are empty.
Corrective Action: Change the containers and ensure that the glass washer is sanitizing at >12.5 ppm iodine. A daily monitoring and recording system for the glass washer is necessary to ensure that it is cleaning and sanitizing the glass ware as intended.
110   Repeat Food Not Protected - General
Observation: Some food item boxes are still being stored on the floor in the walk in freezer. The freezer floor has not been cleaned.
Corrective Action: All the food items must be stored at least 6 inches above the floor to facilitate cleaning and to protect the food from contamination. This is a repeat violation and must be corrected in order to prevent any further enforcement action.
110   Repeat Food Not Protected - General
Observation: The ice scoop is still not being stored in a sanitary manner.
Corrective Action: The ice scoop on the ice machine must be stored in/on a clean container/tray.
116   Repeat Improper Construction / Maintenance of Establishment
Observation: No plans has yet been made to refinish the front wooden counter.
Corrective Action: The front service counter needs to be refinished to make it easily cleanable.

Observation: The hot water tap on the 3 compartment sink has not been repaired yet.
Corrective Action: The dripping hot water tap must be repaired. Target completion date is being extended to 18th of Oct, 2010. A failure to correct this violation will result in $230 violation ticket.

Observation: The ice build up in the walk in freezer has not been cleared yet. The condensate drainage pipe has not yet been fixed.
Corrective Action: The ice build up problem must be repaired . Target completion date being extended to 18th Oct 2010. Failure to correct this violation will result in $230 violation ticket.

Comments:

Following items have been corrected:
1. A paper towel dispenser has been provided on the hand sink in the front service area.
2. An easily cleanable knife rack is being used.
3. The use of under counter freezer has been discontinued. The operator to take the dirty machine out of the kitchen.
