Observation: Rags are not stored in the sani buckets at time of inspection. Some of the rags are used to take hot food in and out of the oven.
Corrective Action: As these rags are being used for two different purposes, ensure that all cleaning rags are stored in a sanitizer solution and all rags used to transport hot food are used only for that purpose. Implement a system whereby the rags are not used for both purposes (consider having a color coding system or designated areas where each type of rag is stored)
116   Improper Construction / Maintenance of Establishment
Observation: Unfinished, uncleanable surfaces below the handsink and on the wall adjacent to the grill.
Corrective Action: Refinish these surfaces so that they are easily cleanable by next routine inspection.

Comments:

All items from previous report have been addressed with the exception of those items noted above which are to be corrected by the next routine inspection.

Cleaning has been completed.
Warewashing board has been fitted with a temporary barrier to prevent water from pooling on the floor.
Soap and paper towel dispensers have been provided at the handsink.
Potatoes are now stored in a cupboard away from the washroom.
