Comments:
Routine inspection. Discussed the results of this inspection with the kitchen manager Charles.
In compliance items:
- Refrigeration temperatures are 4 degree Celsius or below.
- Freezer temperatures are -18 degree Celsius or below.
- Thermometers available on all the cooling units.
- Hot holding temperatures are >60 degree Celsius.
- Hot holding temperature being monitored with a probe type thermometer.
- Temperature logs being maintained for all the refrigeration units.
- Low temperature dishwasher is providing > 50 ppm chlorine in the rinse cycle.
- Sanitizer available in the spray bottles.
- Foodsafe certified food handlers available.
- Hand washing facilities are satisfactory.
- Food storage practices appear to be satisfactory.
- Food handling practices appear to be satisfactory.
- No signs of pest infestation.
The operator is advised to not to turn off the ventilation hood during operating hours even if grill is not in use.
