Observation: The line-cooler above the pasta fridge had food products noted at +22C. Some of the food containers did not fit correctly into their designated space and allowed an air gap. Lids were not fitted to containers.
Corrective Action: Action should be taken to ensure the temperature of food does not exceed +4C at any time.

Observation: The reach-in pasta fridge was noted at +8C.
Corrective Action: This should now be adjusted/repaired to ensure a maximum temperature of +4C at all times. The left hand door of this fridge does not close easily. This should also be adjusted.

Observation: The reach-in freezer used for storage of sea food was noted at -15C.
Corrective Action: This should be adjusted repaired to ensure a minimum temperature or -18C at all times.

Observation: Many of the hot held food products were noted at less than +60C. Food products are understood to be heated within the steam table.
Corrective Action: Potentially high risk food should be rapidly heated to at least 74C prior to hot holding at 60C minimum. This procedure should be investigated and corrected.

Observation: The food slicer was dirty.
Corrective Action: This should now and routinely be thoroughly cleaned.

Observation: The bread freezer was frosted.
Corrective Action: This should now and routinely be cleaned and defrosted.

Observation: Both of the reach-in freezers were in need of cleaning and had a build-up of ice on the bottom shelf and water draining onto the floor.
Corrective Action: These should now and routinely be thoroughly cleaned.

Observation: There are various floor/wall junction seals missing within the kitchen/storage areas.
Corrective Action: These areas should now be adequately sealed leaving a smooth, impermeable and cleanable surface.

Observation: Protection of the florescent tubes within the dry store are still unprotected from the last inspection.
Corrective Action: To prevent risk of exposure of cross contamination from glass the tubes should now be protected.

Observation: At the time of the inspection the dishwasher detergent supply container was empty, the visual warning light was on but staff did not react to replace the detergent container. It is understood that an audible alarm is fitted but not working.
Corrective Action: This should be investigated, the audible alarm repaired and/or made louder and staff trained to be more vigilant.

Observation: The door edge seals to the reach-in fridge used for pasta are in disrepair.
Corrective Action: The door edge seals should now be replaced.

Corrective Action: A cross-connection prevention device should now be fitted to protect the building water supply from this faucet.

Corrective Action: The door handle should now be repaired/replaced.

Observation: Water is dripping/running onto the ice within the ice making machine.
Corrective Action: As water passes over the ice tray it should freeze. The incoming temperature of the water may be too warm, or the flow over the tray too fast or the ice tray may not be cold enough to freeze the water. This should now be investigated and repaired.

Observation: A filter panel is missing from one of the filter hoods.
Corrective Action: The filter panel should now be replaced.

Observation: Wheeled food storage containers situated within the walk-in cooler were dirty and had taped handles.
Corrective Action: The containers should now and routinely be thoroughly cleaned and the tape removed from the handles.

Observation: Food was being stored on the floor of the walk-in cooler and within the dry store.
Corrective Action: To prevent the risk from cross contamination of food work surfaces, food should not be stored on the floor.

Comments:

The walk-in cooler would benefit from additional lighting for food and cleaning activities.
