A summary of the violations found during the inspection are listed below.

Observation: Cold potentially hazardous foods are not stored at or below 4C.
Corrective Action: Discarded food at time of inspection. See item 511 for corrective actions taken.
511  Critical Cold holding equipment is able to maintain a temperature of 4 degrees C. or lower (Sec 19(1)(b))
Observation: Repeat infraction: The old line cooler on the grill line is not working properly again. The food in the line inserts were measured between 16.5 and 17.5C with a probe thermometer. The food in the inside of the cooler was measured at 9.5C with a probe thermometer. The thermometer used by the kitchen staff to monitor the food inside the cooler was reading 13C at time of inspection. Ambient temperature in the kitchen was 22C. The temperature records for this cooler indicate that the temperature of the cooler has been between 8 and 10C since August 25th with no corrective action taken, previous records were not available.
Corrective Action: Discarded all of the food in the inserts at time of inspection. A violation ticket was issued this date for failure to ensure potentially hazardous food is kept at 4C as per section 14(2) of the food premises regulation. Do not use this cooler anymore. Ensure that food is stored between 4C and 60C. Replace the old line cooler as it has consistantly demonstrated that it cannot reliably store foods at 4C or below as required. An example of a functioning cooler is the smaller line cooler closest to the wall, immediately adjacent to this line cooler.

Comments:

Do not use the line cooler until a replacement is provided. Alter the menu and service until additional cooling can be provided. Re-inspection to be conducted Friday morning to observe safety of food service without the main line cooler..

A violation ticket was issued this date for temperature abuse and failure to maintain temperatures required by the Food Premises Regulation.

To ensure that the food you are serving is safe to eat and not temperature abused, coolers must be monitored regularly and any temperature violations should be corrected as they occur. Corrective action should include - discarding temperature abused food, moving food to a working cooler, calling repair technicians immediately, and replacing old coolers that don't work.
