A summary of the violations found during the inspection are listed below.

Observation: There is a broken floor tile under the mop sink trapping water and food debris.
Corrective Action: Repair the broken floor tile.

Observation: A cardboard box is currently being used to cover the large wooden rice bin.
Corrective Action: Replace cardboard box with a cover that is smooth and washable.

Observation: A couple food items are double stacked in the cooler (fish above raw vegetables).
Corrective Action: Ensure that all raw meats are stored below fresh vegetables. There is space for an additional shelf in the walk-in cooler - this would allow for better separation of foods and protection from cross-contamination.
505   Food premises maintained in a sanitary condition (Sec 17(1))
Observation: Overall sanitation in the premises is acceptable - however a deep cleaning will be needed soon for areas that do not receive daily attention.
Corrective Action: Operator confirmed that a 2 week shut-down is scheduled soon during which time thorough cleaning of the premises will be completed.

Comments:

A routine inspection of the premises was conducted - the following items were in compliance with the Regulation:

- All refrigeration temperatures met regulatory requirements.
- Thermometers noted in all coolers.
- With exception of a couple shelves in the walk-in cooler, all other coolers were organized in a manner to preclude cross contamination.
- Foods are properly dated and rotated.
- Sanitizing solution is used on food contact surfaces and measured 200ppm quaternary ammonium.
- The final rinse of the dishwasher measured >71 degrees Celsius.
- No signs of pests were noted during today's inspection.
- Foodsafe trained staff were on site at time of inspection.
- Hot holding units measured >60C at time of inspection.
- Hand washing stations are equipped with liquid soap and paper towel.
- Ventilation system cleaning is up-to-date.
- All equipment appears to be in good working order.
