A summary of the violations found during the inspection are listed below.

505  Critical Repeat Food premises maintained in a sanitary condition (Sec 17(1))
Observation: The line coolers exteriors/interiors and frequently touched areas on the drawers are not being regularly cleaned and sanitized. This is a reoccurring critical violation.
Corrective Action: Clean and sanitize all frequently touched surfaces and equipment exteriors and interiors regularly. Develop a daily cleaning checklist to ensure that this cleaning is done regularly.
802  Critical Premises are free of pests (Sec 26(a)
Observation: Fruit flies observed in the bar area.
Corrective Action: Consult a pest control professional to control flies. Treat all the drains in the facility with bleach solution or equivalent and keep all the hard to reach areas underneath the bar counter clean of any organic debris.

Comments:

Met with the restaurant manager Eri Clark to discuss fly control and general cleaning related violations from the previous routine inspection.

No house flies observed in the facility this time but a number of fruit flies can still be seen in the bar area. The operator is advised to treat the drains with bleach solution and consult a pest control professional for fly control.

For cleaning in the kitchen, the operator must develop and implement a daily cleaning checklist to ensure that inside and outside of the line coolers and all hard to reach area are cleaned regularly.

The following items are now corrected:

- An additional paper towel roll is provided near the sink in the sushi preparation area.
- The walk in cooler door has been repaired and it sealing properly.

A follow up inspection after 1 month to verify the implementation of cleaning schedule and to assess the effectiveness of fly control measures.
