108  Critical Repeat Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: The dishwasher has been serviced but is still not able to sanitize at >71 Degree Celsius at the dishes. The gauge on the dishwasher is not reading the rinse sanitizing temperature.
Corrective Action: The dishwasher must be repaired to provided >71 Degree Celsius at the dishes. A gauge must be provided to read the rinse temperatures. Alternatively,a maximum registering thermometer or thermo-lables can be used to monitor the rinse temperature.

Comments:

Following items from the last inspection report have been corrected:
1. The location of the mop bucket and mops has been changed.
2. The ice scoop is being stored in the clean container.
The following items are still outstanding:
1. The front bar has not yet been provided with the single use paper towels to dry hands.
2. The worn out pop nozzle holder has not yet been replaced.
