Observation: The temperature of the pizza toppings was not 4C uniformly. This is likely because the scoops used to portion pizza toppings prevent the lid from closing completely, thus allowing cold air to continuously escape.
Corrective Action: Deeper inserts may create enough space for the scoops and allow the lid to seal completely. Alternatively, replace the existing lid with a new lid that has a greater depth.
110   Food Not Protected - General
Observation: The ice scoop was stored in the ice bin.
Corrective Action: The scoop must be stored in a container, not directly in the ice.
116   Improper Construction / Maintenance of Establishment
Observation: The wood baseboard along the back wall was recently removed to service the cooler under the counter and has not been replaced, creating a large gap that is allowing the accumulation of dirt and food debris.
Corrective Action: Seal the gap with a new baseboard.

Observation: The concentration of the sanitizer in the bucket used to store wiping cloths was not strong enough.
Corrective Action: Chlorine sanitizing solutions must be kept at 100ppm. Test strips must be kept on site so staff can verify the concentration.

Comments:

General Comments:
1. All temperatures met regulatory requirements with exception of pizza toppings.
2. Hand washing stations were equipped with soap and paper towel.
3. Food storage was acceptable.
4. Food handling was observed during inspection, no concerns noted.
5. Temperature logs for refrigeration units were up-to-date.
6. General sanitation and maintenance of the area was acceptable.
7. Concentration of quat sanitizer in spray bottles tested 200ppm - good.
8. No signs of pests.
