Observation: The ventilation hood over the pizza oven has not yet been cleaned. The debris from the hood has a potential to contaminate the pizza trays
Corrective Action: Clean the ventilation hood. This is an uncorrected violation.
403  Critical Cold potentially hazardous foods are stored/displayed at or below 4 degrees C (Sec 14(2))
Observation: At the time of this inspection, the walk in cooler was broken and the internal food temperature in the cooler was 10 degree Celsius. As per information provided by the operator she is aware of the problem that had started that morning and has already called the refrigeration mechanic.
Corrective Action: All the potentially hazardous items in cooler must be relocated to another fridge. The operator started moving all the food items to the walk in cooler of the other Fat Tony's Pizza location. The walk in cooler must not be used to store any potentially hazardous items until repaired to maintained less than 5 degree Celsius.
507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: The pizza display trays are still not being washed and sanitized after each use.
Corrective Action: This is an uncorrected critical violation. Failure to correct this violation in the future inspection will result in $230 ticket.

The following items from the previous inspection has been corrected:

The high temperature dishwasher is reaching 71 degree Celsius on the dishes.
