Follow up inspection:
The following items from the previous inspection report has been corrected:
- The mechanical glasswasher on one of the bar is providing >12.5 ppm iodine. However, the iodine container on the second bar glasswasher is empty. This violation corrected at the time of this inspection and a concentration of >12.5 ppm iodine tested on this glass washer. The detergent container on this bar glass washer is also empty. It appears that the detergent and sanitizer containers are not be replaced when required. The bar manager is advised to start a daily cleaning checklist to ensure that this violation is not repeated.
The following items from the previous inspection has not yet been addressed:
- The faucets on the hand washing station and the two compartment sink have yet not been repaired.
- As per information provided by the head chef, the operator is currently in the process of getting the ventilation related violation resolved.
- A paper towel dispenser has not yet been provided on the main hand washing station.
The following items from the previous inspection report not verified at the time of this inspection and will be followed up on a later date:
- Sanitizer bucket must be labelled.
- Sanitizer strips need to be provided to test for the quat sanitizer from the dispenser.
- Temperature logs needs to be maintained for all the cooling and hot holding units.
