Observation: A layer of grease observed on the walls and on the counters in the front kitchen area indicating inadequate regular cleaning in the premises.
Corrective Action: Thorough cleaning is needed around on the walls and counters around the exhaust hood. Increase the frequency of cleaning on the walls and counters.

Observation: Refrigeration temperatures are not being recorded.
Corrective Action: Please maintain daily logs for refrigeration temperatures.

Observation: A large dough making machine, not currently in any use, is being kept in the kitchen.
Corrective Action: Remove any unnecessary items from the premises.
604   Adequate handwashing stations at convenient locations are available for employees (Sec 21 (4))
Observation: A new hand sink is installed in the back of the kitchen. However, the faucet on this sink is connected to the detergent/sanitizer dispensing unit impeding the access and making it almost impossible to use as a hand sink. The drainage from this sink has not been properly plumbed into the drainage system. This sink drains into the mop sink below.
Corrective Action: The newly installed sink must be used exclusively for hand washing and must be supplied with hot and cold running water. Remove the pipes from the faucet supplying water to this sink. This sink must also be directly plumbed into the drainage system. Target completion to correct this violation 16th September, 2013.

Observation: No detectable sanitizer measured from the quat sanitizer dispenser. As per information provided by the operator, they make quat and bleach sanitizer solution for the spray bottles manually. Quat and bleach sanitizer solutions in the spray bottles are too strong. No written procedure available for making correct concentration of sanitizer.
Corrective Action: Post the procedure for making correct concentrations of sanitizer solution. Also provide chlorine and quat testing strips for testing sanitizer levels.

Comments:

Discussed the results of this routine inspection with operator Martin.
In compliance items:

- Refrigeration temperature are below 5 degree Celsius.
- Freezers running below - 18 degree Celsius.
- Thermometers available in all the cooling units with potentially hazardous foods.
- Mechanical dishwasher providing >50 ppm chlorine in the rinse cycle.
- Quat and bleach spray bottles available. Sanitizer concentration too high. Please see violation 708 above.
- As per information provided by the operator, the ice cream scoop is washed and sanitized after each use.
- Food safe certified food handlers available.
- No signs of any pest infestation.
- Storage practices in the walk in cooler appear to be satisfactory.

The following items from the previous inspection report has now been corrected.
- As per information provided by the operator, the exhaust hood has now been repaired.

A follow up inspection is required.
