Following items has been corrected:
The dishwasher has been fixed. At the time of this inspection the rinse temperatures for the dishwasher was >181 Degree Fahrenheit. A new temperature gauge has been installed and the rinse temperature being monitored and recorded daily.
The probe food thermometer has been provided and according to the chef, the cooling rates for the soups has been verified (no records available).
