Corrective Action: The minimum temperature measured at the plate must be 71C. Contact the health department when ready for re-inspection. In the mean time continue to use the other dishwasher at Oscars. |
Comments:
A follow-up inspection was conducted - items corrected from previous report include:
1. Upright cooler in the prep area now measures 4C. Ensure that a thermometer is located within the unit and temperatures are checked and recorded on the temperature log.
2. Baked goods have been relocated.
3. Sheet metal lining for the bar cooler is on order.
4. Operator has confirmed that the cartridge filter for the espresso machine is actually not plumbed in - it will be removed to avoid further confusion.
5. Thermometer has been placed in the display cooler by the front door.
6. Operator will revise temperature logs to include additional space for all coolers not presently represented.
Outstanding items
The final rinse cycle of the dishwasher is not hot enough.
