105  Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: The fridge is running at 11 degree Celsius. At the time of this inspection, all potentially hazardous foods in this fridge were discarded.
Corrective Action: Get the fridge fixed as soon as possible. Do not use this fridge to store any potentially hazardous foods until it is fixed. All the potentially hazardous food in this fridge except some recently thawed meats were discarded . Start maintaining temperature logs and make sure to take a corrective action whenever critical temperature limits are not met.
110   Food Not Protected - General
Observation: a)Raw meats are not stored on the lower most shelf. b)Potato sacks are being stored on the floor. c)Old florescent light tubes are some bulbs are being stored on the top of ice machine. d)This facility has a automatic sanitizer dispenser but it is not currently being used. Spray bottles and the buckets being used to store wiping cloths does not have any sanitizer in them. e) Temperature records are not being maintained.
Corrective Action: a)Always store raw foods on the bottom shelf and organize the fridge to have designated areas for raw and ready to eat foods. b)Do not store any food items on the floor. c)Do not store any unnecessary items on the top of the ice machine. It can result in potential physical contamination of ice. d)Start using the sanitizer dispenser and provide quartz testing strips to ensure that 200 ppm quartz is being used to sanitize. e)Start maintaining daily temperature logs and document all the corrective actions taken when critical temperature limits are not met.
113   Improper Sanitary Facilities
Observation: Hand washing sink near the two compartment sink needs to be made more accessible. Front hand washing station does not have paper towels.
Corrective Action: Move the garbage bin to make the hand washing sink more convenient to use. Provide paper towels on the front bar hand washing station.
116   Improper Construction / Maintenance of Establishment
Observation: The door seal on the upright freezer is in need of repair.
Corrective Action: Repair the seal on the freezer door to make it work at the maximum efficiency and to avoid ice build up in the freezer.

Comments:

Dishwasher is sanitizing at 50 ppm chlorine in the rinse cycle but the rinse cycle appears to be soapy. Have a maintenance person investigate it and do the needful to ensure that the dishes does not have visible detergent on it after the final rinse.
Two out of three freezers in this establishment are not running at less than 18 degree Celsius. One of the freezer needs defrosting and other one has a door seal in disrepair. Please do the needful to get these freezer to work below 18 degree Celsius. Maintain the temperature logs for the freezers.
