Observation: The plastic diverters covering the make up air vents by the dishwasher/main cooking line and the ceiling tiles around the diverters require regular cleaning. Please incorporate these into the cleaning schedule. The floor grate by the ice machine also needs to be cleaned. Please ensure that the areas beneath and behind equipment are checked and cleaned regularly.

Observation: During the inspection, we viewed a new steamer that is being used to keep foods at temperature. A kitchen worker went to remove some ribs from the steamer and in the process placed the edge of the lid of the pan on the floor, probably because there was no convenient place to put it other than the floor. This is not acceptable. Please resolve this immediately.

Comments:

In general, the facility was in good condition at the time of inspection. All food products in the kitchen, including condiments, were on ice and all food products were labelled. There was good signage in the kitchen; checklists etc. We expect to see temperature logs for all refrigeration and freezer units posted shortly.
