103  Critical Food Not Protected From Contamination - Other Sources
Observation: The flour being used to roll the pizza is not protected from contamination by the grain beetle. The flour is left on the shelf open to contamination by the beetles which are currently infesting the store.
Corrective Action: The flour must be cleaned after each use of the pizza rolling machine. The whole area, including the machine must be cleaned/sanitized after each use to control the grain beetle infestation.
106  Critical Inadequate Hot Holding Temperature of Potentially Hazardous Food(s)
Observation: The line cooler is running at 6 degree Celsius. The thermostat was turned down by the operator at the time of this inspection.
Corrective Action: Please monitor the temperature of this cooler. An immediate corrective action must be taken whenever the refrigeration temperature is more than 4 Degree Celsius.
110   Food Not Protected - General
Observation: No thermometers present in the line cooler. Thermometer on the walk-in cooler is not accurate.
Corrective Action: Accurate thermometers must be provided in the all refrigeration/freezing equipment.
112   Poor Sanitary Design, Construction, Installation of Equipment & Utensils
Observation: The walk in cooler floor has not been provided with a smooth, non absorbent and easily cleanable finish. This is an outstanding violation from the previous inspection(s).
Corrective Action: The walk in cooler must have a smooth easily cleanable finish.
115   Inadequate Insect / Rodent Control
Observation: Grain beetle infestation in the flour around the dough rolling machine. Some beetles are seen inside the dough rolling machine.
Corrective Action: Discard the infested flour. Clean and sanitize the dough rolling machine. Vacuum the area around the dough rolling machine. Clean the flour in all the cracks and crevices around the machine. Take out all the flour bags from underneath the shelf and clean the area of any flour. All the opened bags of flour must be discarded. The flour bags must be stored at least 6 inches high from the floor in order to facilitate the cleaning underneath. Any opened bags of flour must be stored in a container with a tight fitting lid. Cleaning needs to be enhanced in the whole premises.Get the services of a pest control professional to deal with the grain beetle infestation.
