Observation: Line cooler in front of the grill is running at 15 degrees celsius as measured by a probe thermometer in bread)
Corrective Action: No potentially hazardous foods are to be stored in this cooler until it is repaired. Door seals are faulty, doors are broken, enhanced cleaning is required throughout this unit. Repair or replace this cooler.
105  Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: Pop cooler used to store food is running too warm (11 degrees celsius as measured with a probe thermometer in mashed potatoes).
Corrective Action: Repair this cooler immediately. All foods in the cooler were moved into the walk-in cooler at time of inspection. Do not use this cooler until it is repaired.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Glasswasher does not dispense 50ppm chlorine as required.
Corrective Action: Repair glasswasher immediately. Do not use the glasswasher until it is repaired. Instead, use the dishwasher in the kitchen area.

Observation: Temperature records are insufficient and incomplete.
Corrective Action: Temperature logs must be completed at least once a day. Provide an accurate means to measure temperatures - if air temp fluctuations are an issue, provide an accurate probe thermometer or place a stem thermometer in a cup of water for a more accurate reading. Ensure soup temperatures are recorded daily - soup must be first heated to 74 degrees celsius and then hot held in the warmer at 60 degrees celsius or above). This is the third consecutive order for this violation. Further violations of this nature will result in ticketing measures.
110   Food Not Protected - General
Observation: Ice scoops stored above ice machine on a dirty surface.
Corrective Action: Ice scoops sent to the dishwasher at time of inspection. Ensure ice scoops are stored in an easily cleanable container at all times.
115   Inadequate Insect / Rodent Control
Observation: Some flies noted in the premises.
Corrective Action: Provide a screen door for the back kitchen door to prevent potential fly problems.
116   Improper Construction / Maintenance of Establishment
Observation: Enhanced cleaning is required throughout the kitchen and front line area.
Corrective Action: Focus on the grill area, wash the baffles for the hood vent, clean underneath the line cooler, as well as behind and underneath equipment in the front service area and the kitchen.

Corrective Action: Submit a cleaning checklist for staff that will address the cleaning issues outlined in this report.
