Observation: All potentially hazardous foods are not stored under refrigeration (4ºC / 40ºF or less ).
Corrective Action: Inserts in cold line near Pizza Oven do not maintain foods below 40 degrees F. The unit is too close to source of heat, ambient air temperature in kitchen too warm. These items must be rotated within 2 hours or discarded.

Observation: Surfaces of walls, floors, ducts, ceilings need cleaning
Corrective Action: Proceed with thorough cleaning of premises during annual shutdown in October. Include installation of bathroom fan.
